Basil Pesto

This pesto is great with multiple foods. We have had it on rice noodles, black bean noodles from Trader Joes, spaghetti squash, zucchini noodles, with shrimp tacos, and on many other dishes. It is great to add to sandwiches and wraps.

This pesto basil can be a great summertime meal or you can freeze it for the winter. It is east to make if you have a food processor or blender. Pick your basil early in the morning before it gets too much sun and it will have the most flavor.
​What you need:
  • ​3 Cups fresh basil packed
  • 1/2 Cup grated Parmesan cheese
  • 1/4 Cup pine nuts
  • 2 cloves of garlic
  • 1/2 lemon, juiced
  • ​1/4 tsp. salt
  • ​1/3 Cup extra-virgin olive oil
Blend everything together in a food processor. Serve immediately, store in the fridge for up to 4 days, or freeze 4 to 6 months for best flavor.

    This quote to me means that our whole beings should be in a constant change. Our cells completely replace themselves in 7 years. We are like trees in a way. Produce leaves, flower, fruit, reproduce, sluff, leaves change colors, loose leaves, and sleep to regenerate. I think that if we don't change we become redundant and stuck in an unhappy rut! What have you changed today? The way you put on your clothes or did your hair. How about surprising someone you love or even a complete stranger? Have you gotten rid of some of that junk in the basement that has been collecting dust for years or even some clothes in the closet you haven't worn for 6 months? Try to challenge yourself each and everyday to embrace a good change that will help you grow and live!
